Rice Bubble Slice

I had a lovely friend in Secondary School who always brought an extra piece of her mother’s Rice Bubble Slice to share with me at recess. When my family moved interstate when I was fourteen, she gave me the recipe. I’ve been making Leonie’s mother’s slice for my family and friends ever since.

125 gm (4 oz) butter

1/3 C sugar

3 Tblspns honey

4 C Rice Bubbles

1/2 C coconut

Place the butter, sugar and honey into a large saucepan and bring to the boil, stirring constantly. Mix in the Rice Bubbles and coconut, and press into a 7″ x 11″ slice tray. Cut into squares after ten minutes before refrigerating.
